Succulent and very aromatic, with generous marbling throughout, the cowboy steak is a bone-in rib steak that has the bone cleaned of the cap, like the tomahawk, except that the prominent bone is shorter: 3.5 cm instead of 7 cm, as the tomahawk has.

Cooking method
Grill – being just as thick as the tomahawk, the cowboy steak is first grilled for at least 15 minutes over indirect heat, on the warm half of the grill, until the center of the steak reaches 95-100°C; then remove from the grill, wrap in aluminum foil and let rest for another 15 minutes; then heat the grill well and grill the piece of meat on the side with the embers for 1 minute on each side. Let it rest again for 10 minutes.
Pan & oven – the thick piece of cowboy steak can be marinated for 3-4 hours at room temperature or overnight in the refrigerator, well covered with a mix of coarsely ground spices: cumin, coriander, pepper, paprika, oregano and garlic. Brought back to room temperature, fry for 4-5 minutes on each side in a large, thick cast iron skillet, then transfer to the oven preheated to 200°C and keep for 15-20 minutes on the oven rack positioned centrally. The steak reaches medium-rare doneness when the meat thermometer registers 52°C inside. Remove from the oven and let rest for 10 minutes.

The Karpaten Meat farm group is located in Sibiu county and its structure includes the following farms: breeding farm of Aberdeen Angus cattle, fattening farm, quarantine and import/export farm. The total population of the farms is approximately 8000 heads in continuous development. The breeding, fattening and marketing of cattle, respectively the marketing of Angus beef – as a complete system – has been practiced by us successfully in recent years.
The project to create a business with Angus beef cattle began in 2008, when the founders decided to give a chance to the unlimited possibilities of Romania, where there are ideal conditions for the production of quality Angus beef.
