Burrata is a stretched curd cheese made from cow's milk. Its particularity lies in the fact that it is a double-structured cheese: the outer shell is actually composed of a sheet of mozzarella paste, while the interior is made up of whey butter. Considered a true delicacy today, its processing is quite simple, also because it is a product that does not require spices. The taste is rich, buttery and milky.
