About the producer
The company STAMATIS PROIKAS S.A. is located in Sohos of Thessaloniki, a mountainous town in the municipality of Lagadas. It specializes in the production of cheeses for three generations and in particular for more than a century, using only animal milk from the wider Sohos region and is well known in Greece for its excellent quality dairy products.
It all started when the grandfather of Stamatis Proikas returned to Sohos from Mount Athos where, after working as a cooper and learning the art of cheese from the monks. He immediately made his first herd to develop milk production. The grandson Stamatis continued his grandfather's enterprise in his effort to support his orphaned family. In post-war Greece, Stamatis decided to set up the first professional dairy factory in 1962, taking into account that the market in Thessaloniki had already appreciated and recognized the kasseri produced in Sohos. According to the legislation in force, the kasseri cheese produced bears the name of the producer, and the term KASSERI CHEESE PROIKAS SOHOS remains the name of the product to this day. In 1979, Stamatis Proikas' daughter, Eleni, who belongs to the third generation of the family, took over the company and continues to manage it to this day. Her daughters also successfully take action in the company, opening new prospects for its continuous development and evolution.
STAMATIS PROIKAS S.A. products, which are numbered in 50 types of traditional cheeses, as well as new generation cheeses, are considered to be of high quality in the cheese industry, as they continue to be produced exclusively from selected Greek milk, without additives, preservatives or improvers and all are matured for a long period of time. In this way, they manage to maintain an exceptionally high quality, an important nutritional value, the uniqueness of the authentic Greek cheese taste and the pleasant sense of aftertaste that fascinates even the most demanding consumer.
KASSERI PROIKAS SOHOS, which is the company's main product, is the snack of three generations of consumers. The grandparents knew it and offered it to their children, and the new generations offered it, in turn, to their own children. Thus, for three generations, KASSERI PROIKAS SOHOS has managed to show the simplicity of enjoying a slice of bread with kasseri for brunch or for an afternoon snack. It can also be used melted to give flavor and intensity to homemade pizza, satisfying the hunger of children and adults in the evening.
