Traditionally, the “palmier” is a sweet French pastry. The palmier is a very long puff pastry dough folded in a heart shape, generously sprinkled with sugar that caramelizes when cooked. It is made from a double roll of dough cut into slices, which gives it its characteristic shape reminiscent of palm tree leaves. These palmiers are inspired by the original recipe but are used as an aperitif because they are salted, flavored with herbs from Provence.

Provence is a French region that contains many mountains with herbs. This term originally includes a variety of wild Provencal aromatic plants, including thyme, savory, marjoram, oregano, rosemary, basil, chervil, tarragon, lovage, thyme, sage, bay leaf and fennel.
