Ossobuco is a delicious Italian dish, traditionally made with veal shanks, specifically cross-cut sections of the leg, which reveal the marrow. Here is a basic recipe for cooking ossobuco:
Ingredients:
4 veal ossobuco pieces (cross-cut sections about 2-3 inches thick)
Flour for dredging, Olive oil or butter for browning, Salt and pepper, 1 large onion, chopped, 2-3 garlic cloves, minced, 2 celery stalks, chopped, 2 carrots, chopped, 1 cup dry white wine, 2 cups chicken broth or stock, 1 can diced tomatoes (or fresh tomatoes), Fresh or dried herbs (thyme, rosemary, bay leaves), Grated lemon zest (optional), 2-3 tablespoons tomato paste (optional, for extra richness)
Instructions:
Season the ossobuco pieces with salt and pepper on both sides. Dredge each piece in flour to coat evenly.
Heat the olive oil or butter in a large Dutch oven or heavy-bottomed skillet over medium-high heat. Brown the ossobuco pieces for about 3-4 minutes per side, or until nicely browned. Remove from the pot and set aside.
Add the onions, garlic, celery, and carrots to the same pot and sauté for about 5-7 minutes, or until slightly softened.
Return the ossobuco pieces to the pot. Pour in the white wine and let it simmer until reduced by about half. Then add the chicken broth or stock, diced tomatoes, herbs, and lemon zest, if using.
Reduce heat to low, cover the pot, and let the ossobuco simmer for about 1.5 - 2 hours, or until the meat is fall-off-the-bone tender.
Taste and adjust seasonings as needed. You can add tomato paste for extra richness. Serve ossobuco with sides such as risotto, pasta, or polenta.
Ossobuco is a wonderful dish and is best made ahead of time, allowing the meat to become extra tender and flavorful, and the marrow adds a rich depth of flavor.

Refrigerated product Class A. Storage temperature: between 0°C and 4°C. Cook before consumption. Vacuum packed. Color and smell may be influenced by vacuum packaging. The product will regain its natural color and smell within 15 minutes of opening. Consume within 24 hours of opening the package.
