An accredited master blender and evaluator, representing Portugal as a judge at the most prestigious international olive oil competitions, Francisco Ataide Pavão is a respected and established name in the world of oleology.

Although his professional career takes him to all corners of the world, Francisco always returns to the olive grove estate in Terra Quente Transmontana, which has belonged to his family for eight generations, where he dedicates his time to his own creations.

We are proud that two of this year's signature RARUM lots – R25 and T25BIO – bear his signature, and we are delighted to offer them to enthusiasts and connoisseurs.

The R25 and T25BIO lots from the 2024 harvest are oils with very different taste profiles from each other.

R25, made from olives harvested in October 2024, is an oil where pungency and bitterness are found in perfect balance, whose complexity gradually unfolds. We note hints of green fruits, tomatoes, and bananas, and a prolonged aftertaste.

T25BIO comes from olives harvested in November 2024, before the fruit reaches maturity, and is an organic blend obtained from three olive varieties. Sensorially, this blend begins with fresh green notes but continues with more pronounced notes of almonds and dried fruits. Pungency and bitterness are well-balanced, and the aftertaste is long and complex.
