The resulting lower legs are trimmed of fringes, with the muscle, fat, tendons, and skin remaining in natural adherence. The product is made from class A chicken carcasses processed according to STAS 7031/2008. For admission to class A, carcasses must be intact; clean, without any trace of foreign bodies, dirt, or blood; must not present any foreign odor; must not present open fractures, severe bruises. For exclusive admission to class A, we have the following conditions: intact carcass, good conformation, firm meat, well-developed and fleshy breast and legs; a few small feathers, pinfeathers (feather tips) and down (thin feathers) are tolerated; lesions, bruises, and discolorations are allowed only in small numbers, if they are small in size and barely perceptible, and if they do not affect the breast and legs.
