The rib bone acts as a natural insulator, slowing heat transfer to allow the meat near the bone to remain more tender and juicy. Why ribeye?
The ribeye is cut from the rib section between the sixth and twelfth ribs - a region that does relatively little work, producing finer muscle fibers, more intramuscular fat, and naturally greater tenderness. Bone-in - Maximum Flavor

How to use
Allow the steak to come completely to room temperature - at least 45 minutes for a thick bone-in cut. Season very generously on all surfaces. For best results, use a reverse sear: roast at 120°C until the internal temperature reaches 48-50°C, then sear in a smoking-hot cast-iron skillet for 90 seconds per side to form a dark, lacquered crust. Aim for medium-rare (54-57°C internal). Let it rest for 8-10 minutes before serving.
Serve directly on the bone. Classic sides: roasted bone marrow, truffle butter, steakhouse creamed spinach, or thick-cut fries. Wine pairing: a Napa Valley Cabernet Sauvignon, Châteauneuf-du-Pape, or an intense Argentine Malbec.
