About the producer
The story of Michael Artisan Bakery began in 2015 with two loaves of bread baked in a home oven. The determination, will and mission in which the producer strongly believed represented his motivation to establish an artisan bakery in which to produce only healthy, clean bread, without improvers or preservatives.
All products are obtained from natural ingredients. The doughs are slowly leavened with natural, authentic sourdough, that natural ferment obtained only from flour and water. The production process is an artisan one. The preparation of raw materials, baking or hydrating the seeds, feeding the sourdoughs, dividing the pieces of dough, shaping them are manual processes, carried out by artisan workers.
Superior flours are used, without which the quality would not be the same. Also, carefully selected seeds are used, baked and hydrated in the kitchen.
The leavening and baking processes are strictly monitored, thus, the obtained crumb is an alveolated, aerated, well-developed and baked one. The breads are carefully baked in the oven on the hearth.
