Broccoli Rabe or Cime di rapa, also called wild broccoli, originates from the Puglia region in southern Italy, where it is still the main ingredient of the national dish "Orechiete con cime di rape" - pasta with dried tomatoes, parmesan and cime di rape.

The plant has fringed leaves, small inflorescences, a cabbage smell and an intense cabbage or broccoli taste. It is found in many recipes in Italy, but it can also be cooked very well in a wok, in Asian recipes or steamed, we can use it in salads or for garnishes.
We use almost the entire stem for cooking, removing any yellow leaves and the stalk.
