This raw ham is produced from a selected and prepared pork leg. The ham is covered with coarse salt and a little garlic for two to three weeks. The salt is then removed and the ham is left to rest in a cool room, it is never smoked. When salted, the fresh leg is cut, but not boned; it weighs at least 8.5 kg. The ham is then placed in an oven (15 to 30 ° C) for a few days. It is then hung cold in dryers for at least eight months. At the end of the maturing period, its weight with bone is at least 6 kg.
The protected geographical indication (PGI) identifies a non-agricultural product whose quality, reputation or other characteristics are linked to its geographical origin.
PGI applies to agriculture, agri-food and viticulture.
Serving suggestion
The ham goes very well with cantaloupe as a starter or as an aperitif.
