Description
This is Pecorino cheese produced with pasteurized milk. During processing, Candidum pennicillum is placed directly in the cauldron. The cheese is broken into large pieces to maintain greater humidity and to have a creamy product. After about 15 days, at the first formation of mold on the surface, it is wrapped in paper. Complete maturation takes place after about 30/40 days. As the product matures, it gains creaminess and aroma, the reason why we wrapped it in paper is to maintain the correct maturation of the mold.
Soft pecorino cheese with a creamy and soft consistency, with white mold in the crust, sweet and delicate taste, also especially because it has truffle flakes inside.

Serving recommendation
As an appetizer: it is recommended to taste with light red wines, accompanied by fruit (pears), and cold cuts.

About the company:
It all started in 1925, from a small dairy in the old town of Siena. Since then, for the locals, the name Morbidi has become synonymous with "eating well". Over the years, the Morbidi family has always been able to innovate and rise to the challenges, and in the 1940s, we started working with pork, followed by sheep's milk, in accordance with the oldest local traditions. Over the generations, we have grown into a modern business, with a keen eye for sustainability and a short supply chain, but we have never forgotten where we started: in a wonderful place that remains ready to welcome anyone passing through the heart of Siena.
