Beef tongue is a tasty piece of meat, but it requires a long preparation to become tender and easy to eat. Here's how you can cook beef tongue:
Step 1: Initial preparation
Cleaning the tongue: Wash the beef tongue under cold water to clean it well. Remove the outer skin and any visible impurities.
Preliminary boiling: Put the beef tongue in a large pot and cover it with cold water. Add soup vegetables (carrots, onions, celery) and spices such as salt, pepper and bay leaves to taste. Boil the tongue over medium heat for 10-15 minutes.
Removing the tongue and additional cleaning: After preliminary boiling, remove the beef tongue from the water and rinse it under cold water to cool it. Clean it well of any membranes or other impurities that may still be on its surface.
Step 2: Main cooking
Slow boiling: Put the cleaned tongue in a clean pot and cover it with cold water. You can add vegetables and spices again to intensify the taste. Boil the tongue over low heat for 2-3 hours or even more, until it becomes tender and acquires a soft texture. The longer you boil the tongue, the more tender and easier to cut it will become.
Cooling and final cleaning: Once cooked, remove the tongue from the pot and let it cool enough to handle. Clean it again of any remaining impurities and remove any skins or fat that may be on its surface.
Step 3: Serving
The cooked beef tongue can be cut into thin slices or pieces, depending on preference, and can be served as is, as part of sandwiches, in salads or in other culinary preparations.
Beef tongue is a piece that becomes extremely tender and tasty after prolonged boiling, and the flavors of vegetables and spices will integrate nicely into the meat. It is important to be patient during the cooking process to obtain a delicious final result.
