Gimar Fishburger – Natural taste, perfect texture
Gimar Fishburgers are artisanally made hamburgers from selected fresh fish fillets, without skin and bones. The producer pays special attention to the mincing process to preserve the natural texture of the meat, which transforms each Fishburger into a refined bite.
They are individually packed in EAM trays, so that the product maintains its qualities unchanged for longer.
Everything starts with carefully selected raw material – perfectly clean fillets, without bones, skin, or the dark lower part. These are minced and mixed with the rest of the ingredients, and then the product is placed into the packaging.
“During the post-rigor cycle of salmon, we apply rigorous hygienic-sanitary and aseptic controls to keep microbiology under control. In addition, we use controlled thermal processes and natural salt-induced osmosis, which homogenizes fiber tension and controls protein degradation.”
Gimar controls 4 different moisture levels to obtain various textures, firmnesses, and taste intensities, depending on the type of maturation.
The Fishburger corresponds to the “Fine and Dry” maturation level, the one with the highest amount of moisture – it preserves the naturalness of fresh fish, purifies the flavors, and offers a firmer texture.
