Originating from central and southern Italy, ricotta is a fresh dairy product obtained from cow's milk whey and is characterized by a creamy texture. Its name comes from the heat treatment of the whey. After the first boiling carried out to produce the cheese, a second boiling takes place, so the whey is re-boiled (ri-cotta in Italian).
