Description

This is no ordinary burger. The Japanese Wagyu burger is prepared from authentic Wagyu beef - the same legendary beef responsible for the most coveted steaks in the world. Each patty is made from premium Wagyu beef, minced in exact proportions, offering the unmistakable buttery richness, extraordinary juiciness, and depth of umami that only true Wagyu can provide.

Wagyu literally translates to "Japanese cow" (wa = Japanese, gyu = cow), but its significance goes far beyond geography. It represents centuries of selective breeding, meticulous farming, and a deeply Japanese approach to quality - one that prioritizes the animal's well-being and the pleasure of the person eating it above all else.

What makes Wagyu different?

Wagyu cattle - mainly the Japanese Black breed (Kuroge Washu) - possess a unique genetic characteristic that allows them to produce intramuscular fat at a density and distribution that no other breed can match. This fat is exceptionally rich in monounsaturated oleic acid, the same fatty acid found in olive oil, giving it a lower melting point than conventional beef fat. Wagyu fat begins to liquefy at a temperature close to body temperature - contributing to the famous melt-in-the-mouth sensation that defines the Wagyu culinary experience.

The Wagyu Burger - Why ground Wagyu works

Grinding parts of the Wagyu beef - the highly marbled trimmings from the preparation of premium steaks - evenly distributes an extraordinary fat content throughout each patty. The result is a burger with exceptional juiciness: one that bastes itself during cooking, browns beautifully, and delivers a rich, umami-packed flavor with every bite. Unlike many premium burgers that rely on toppings for flavor, a Wagyu patty is flavorful enough to stand almost on its own - requiring only light seasoning and high heat to become something truly remarkable.

Japanese Breeding - A different philosophy

Wagyu cattle in Japan are housed in low-density, low-stress environments, fed carefully formulated diets including rice straw, silage, and high-energy grain mixes, and handled with individual attention rarely seen on commercial beef farms. The animals live longer before slaughter than conventional cattle - typically 28-32 months - giving the intramuscular fat time to fully develop. The Japanese beef grading system evaluates carcasses on a 15-point scale, with A5 being the highest designation, requiring outstanding marbling, color, firmness, and texture.

How to use
Shape the patties minimally - overworking the meat compacts the fat and diminishes the texture. Season lightly with coarse salt only on the outer surfaces. Cook in a hot cast-iron skillet without extra fat: the Wagyu fat will melt immediately and provide its own basting medium. Cook to medium (60-63°C) - well-done is not recommended, as it eliminates the oils that carry the flavor. Let it rest for 3 minutes before serving.

Best served simple: a quality brioche bun, sweet white onion, good mayonnaise, and a touch of mustard. Trust the beef - the philosophy is moderation. For a more refined serving: matured cheddar, black truffle mayonnaise, pickled shallots, and a toasted milk bun. Pairs well with a light Pinot Noir, a cold champagne, or a well-crafted craft IPA.
