The Taste of Childhood

Childhood for us means the sound of the ball hitting the asphalt. ⚽ The repeated calls of our mother, from the balcony, calling us to eat. The chalk marks that only the rain managed to erase. 🌈
The ball, which no matter how hard we tried, always ended up either under a parked car or over the neighbor's fence. 😁 And then there's the enticing smell of apple pie. 🥧
The memory of bananas that reached us (maybe) once a year. 🍌 The sponge cake that we always ate hot. And the rice pudding. 🍚 With cinnamon, with jam, with sugar or plain, because sometimes it didn't even matter, we were so hungry after a day of chasing dreams!
We know! Memories don't always sound the same, but they have the same taste: the taste of childhood, the best of all. And that's where we want to go back today. To rediscover the joy of simple things. 🧡
From rice pudding to biscuit salami. From homemade pancakes to compote. 🥞🥄 Or to jam. Anything that takes us back. At least one day a year. We've already gone back and relived stories of yesteryear. For our colleague, Andreea, the childhood dessert is rice pudding cooked by the skillful hands of her grandmother. It was the treat she received every day, around 11:00 AM, just when it was time for cartoons. She closes her eyes and almost feels
the sweet taste of milk, along with the unmistakable aroma of cinnamon. A delight! Prepare it with us!
Ingredients for 4 servings:
🍚 200 g rice
💧 250 ml water
🥛 750 ml milk
🥄 120 g sugar
🧂½ vanilla pod or 1 teaspoon extract or 1 sachet vanilla sugar and a pinch of salt
Good to know:
Generally, the ratio between rice and milk is 1:4, meaning for 100 grams of rice we add 400 ml of milk. For a creamier consistency, the rice-milk ratio can be 1:8. As it cools, the mixture continues to thicken. If you want to enjoy it later or even the next day, the recommendation is to slightly increase the liquid ratio.
Instructions:
Boil the rice in cold water. You can use any type of rice, and for the cooking time, follow the instructions on the package. While the rice is boiling, heat the milk and set it aside. When the rice is cooked, add the milk, along with the pinch of salt
and sugar. After turning off the heat, add the flavors and savor every bite.

Andrei fondly remembers the pancakes with jam he used to make with his father every Sunday morning. To be fair, his father was in charge of cooking, while he was responsible for quality control and spreading the jam on the steaming pancakes. But everyone has their own talent 😊
And because we can't get enough, he gave us the recipe for approximately 12 thin and fluffy pancakes.
Ingredients:
🥚 3 eggs
🥄 250g white flour
🥛 500 ml cold milk
🧂 a pinch of salt
🧈50g melted and cooled butter
🥄optional: 1 small teaspoon of powdered sugar
Additionally:
👉 oil for frying
👉 jam, preserves, creams, or savory fillings - your choice
Instructions:
Crack the eggs and mix them, then add the cold milk, butter, salt, and mix everything well. Start adding the flour gradually while mixing to avoid lumps. The mixture, once everything is well incorporated, is left to chill for 30 minutes, preferably in the refrigerator. The cold milk will thicken the starch in the flour and make the mixture just right. Additionally, it helps eliminate air that would create unwanted bubbles in the pancakes and cause the filling to leak through the rolled pancake. After 30 minutes, remove the mixture from the refrigerator and prepare the pancakes.
Good to know:
The pan is important. It's good to have one that doesn't stick when cooking. It's preferable to cook on high heat. It helps distribute the heat evenly across the surface of the pan. Use oil, not butter, to grease the pan. Butter will burn and affect the final result.
If the little ones "test" the pancakes as you cook them, remember that you probably did the same at their age.
