Description
Colored chicken eggs – how the different colors appear
The color of a chicken egg is genetically determined and depends on the breed of the bird. There are hens that lay colored eggs, which you can also purchase from Agroland. Natural pigments produced in the hen's oviduct are responsible for coloring the shell:
- White eggs – usually come from hens with white plumage and white earlobes. Examples: Leghorn.
- Brown eggs – occur in breeds with darker plumage and red earlobes, such as Rhode Island Red or Marans. The pigment responsible is protoporphyrin.
- Green and blue eggs – are produced by special breeds, such as Araucana or Ameraucana. The pigment called biliverdin penetrates the shell and creates the greenish-blue hues.
- Speckled or spotted eggs – are a natural variation caused by the uneven deposition of pigments.
Important to remember: the shell color does not affect the nutritional quality of the egg. It is simply a breed characteristic and not a sign of "organic" or "natural".
