Description
A wine that seeks to perfectly highlight the Greco grape variety, which seems to evolve promisingly around the vineyards of the Feudi di San Gregorio estate, subjected to a new winemaking recipe, the result being as promising as possible. To begin with, the grapes are harvested by hand, only the healthy bunches being selected. Fermentation takes place for 5 months in stainless steel barrels, with the bâtonnage method on yeast being preferred to integrate the appropriate aeration. Thus, the taster is greeted by a straw-yellow color and slight intense and persistent golden reflections. At the olfactory level, there are clear sensations of fruit, but also traces of mint, which seem to bubble. On the palate, the attack is fierce, the mineral notes marking their territory, leading to a different finish.
Serving recommendation
To be consumed with Mediterranean dishes, various cheeses (mozzarella di bufala) or Ricetta Spigola all-acqua.
