This Pecorino is mainly produced in the spring and summer months and after a maturation of about 60/90 days. During the grape harvest, the must is used as a preservative, a method used in the past in the Chianti region. The grapes keep the Pecorino soft and elastic, ensuring that during the following seasoning the cheese will acquire more aroma, maintaining a delicate and crumbly consistency inside. In accordance with this tradition and methodology handed down from father to son, each year some of the best forms of Pecorino products have the privilege of receiving this treatment.

-As an appetizer: it is recommended to taste with a quality wine, on a chopping board, with cold cuts and fruit.
About the company:
It all started in 1925, from a small dairy in the old town of Siena. Since then, for the locals, the name Morbidi has become synonymous with "eating well". Over the years, the Morbidi family has always been able to innovate and rise to the challenges, and in the 1940s, we started working with pork, followed by sheep's milk, in accordance with the oldest local traditions. Over the generations, we have grown into a modern business, with a keen eye for sustainability and a short supply chain, but we have never forgotten where we started: in a wonderful place that remains ready to welcome anyone passing through the heart of Siena.
