Cime di rapa, also known as turnip greens, originates from the Puglia region in southern Italy, where it is still the main ingredient of the national dish "Orechiete con cime di rape" - pasta with sundried tomatoes, parmesan and cime di rapa.

The plant has fringed leaves, small inflorescences, a cabbage smell and an intense cabbage or broccoli taste. It is found in many recipes from Italy, but it can also be cooked very well in a wok, in Asian recipes or steamed, we can use it in salads or for side dishes.
We use almost the entire stem for cooking, removing any yellow leaves and the stalk.
