The Breed - A Crossbreed Born for Flavor
Swami cattle are the result of a unique cross between the Jersey and Holstein breeds - two lineages refined over generations to produce exceptional marbling and flavor. The Jersey breed contributes richness and depth; the Holstein breed brings size and muscle structure. The combination produces a breed with a remarkable distribution of intramuscular fat and a characteristic buttery taste that sets it apart from conventional beef.
The Feed - Two Phases, One Goal
Swami cattle are raised on a carefully structured two-phase diet. In the first phase, the cattle graze freely on the clean and lush pastures of Denmark - building a natural, grass-based foundation that contributes to the complexity of the final flavor. In the second finishing phase, which lasts 180 days, they transition to a specialized blend of wheat and sugar beet. This extended grain finishing is what drives the exceptional marbling: the fat accumulates gradually and evenly through the muscle fibers, melting during cooking to deliver the signature Swami richness in every bite.
The Striploin - Character and Tenderness United
The striploin lies between the ribs and the tenderloin - two of the most prized regions of the animal - offering the ideal balance between tenderness and character. In Swami beef, this balance reaches its peak. Each striploin is hand-selected from certified Swami animals, then aged and precisely cut by our in-house butchers. The aging process allows natural enzymes to break down the connective tissue, intensifying the flavor and ensuring that every slice is as tender as it is flavorful.
Animal Welfare and Sustainability
Swami cattle live in low-stress environments on Danish farms operating under some of the strictest welfare regulations in Europe. Diets are free from hormones and unnecessary antibiotics, and handling practices minimize stress throughout the process. Better welfare means better beef: calmer animals produce more tender and flavorful meat.
How to use
Bring to room temperature for at least 30 minutes before cooking. Season generously with coarse sea salt and black pepper. Sear in a very hot cast-iron skillet or on charcoal for 2-3 minutes on each side to form a thick crust. Finish at medium-rare (54-57°C internal) to allow the marbling to melt completely. Let it rest for at least 5 minutes before slicing against the grain.
Exceptional with herb butter, béarnaise sauce, or simply with flaky sea salt. Pairs beautifully with roasted bone marrow, grilled asparagus, or gratin potatoes. For wine, a bold Barolo, a Ribera del Duero, or a structured Cabernet Sauvignon.
