Wash the elderflowers one by one in cold water, dipping them gently to remove any insects or dust. Shake off the water well.
The base syrup
Put the water and sugar in a clean pot. Heat gently on the stove only until the sugar is completely dissolved (do not let it boil!). Remove from heat and let cool until lukewarm.
Cold maceration
Add the yellow zest from 2 lemons and the squeezed juice from all 4 lemons to the syrup. Put the elderflowers in the pot, cover with a lid, and leave everything to macerate in the refrigerator for 4 days.
