The meat used must come from "noble parts" (pulp, shoulder, muscle, belly) of pork from farms in the region that meet strict specifications. The cubes of hard fat are made from back fat without rind and/or pork belly (between 18 and 20% of the mixture).

It must be seasoned with salt, pepper (usually large whole black peppercorns and a little ground grey pepper), garlic, red wine from the region, and lactic ferments. Other spices are often added (nutmeg).

It is served as an appetizer or as a starter.
