Traditional Japanese Udon noodles are very similar to European spaghetti but are thinner and not round. They are prepared by a traditional method from wheat. The wheat is ground several times until the flour is extremely fine. The dough is rolled out into thin sheets, and then cut. Drying is done at room temperature, without artificial heat sources, and left to dry for 48 hours.
