If you thought the name comes from the famous Roman emperor, Caesar, you were sorely mistaken.
It seems that both the name and the recipe were attributed to the Italian-American Caesar Cardini who, according to his daughter, invented it in July 1924, in his restaurant in Tijuana, Mexico. The Caesar Restaurant was opened there because of the prohibition in the United States of America. On the evening of July 4, the restaurant ran out of supplies and in order not to lose the customers already seated at the table, Cardini managed to create, in front of them, a salad from the remaining ingredients in the refrigerator and pantry.
Another version is that a partner of Cardini's made the famous salad after a recipe received from a pilot from San Diego and it was initially called "Aviators' Salad".
Whatever the real origin of the salad, it is certain that it was made popular in Cardin's restaurants.
In a short time, the salad became a must-have on the menus of restaurants in the United States of America, and in Europe, Wallis Warfield Simpson, the mistress and later wife of Prince Edward VII of Wales, made it famous. Miss Wallis often frequented Caesar's restaurants in the USA and when she returned, she would instruct the chefs in London to prepare her favorite salad.
