Description
Medium spicy Thai red curry paste with lemongrass, galangal, red chillies, shrimp paste and coriander.
Use
Stir before use. In a frying pan or wok, heat 1–2 tbsp oil over a medium/high heat, add 400 g diced chicken breast (for 4 servings) and fry for 3 minutes. Add the paste and stir until fragrant. Add 100 g baby corn, 100 g diced red pepper and fry for 2 minutes. Then add 400 ml coconut cream, bring to the boil, then reduce the heat and simmer for 10 minutes or until the meat is tender and the sauce has thickened slightly. Serve with jasmine rice, garnish with chilli flakes, chopped coriander and a slice of lime.
