Description
Marinated anchovies in wine have their origins in an ancient Mediterranean recipe that Russian-Lipovan fishermen from Sulina took over from Greek merchants in the area and adapted to current ingredients. Thus, they used the Black Sea sprat (locally called "kiulca") which was found in abundance, caught by them at sea tallies, instead of the Aegean Sea anchovy (called "gavros"), and for marinating instead of lemon juice they used dry white Dobrogean wines mixed with wine vinegar.
