Ingredients

  • 250 ml semi-skimmed milk 1.5%
  • 20 g unsalted butter 82% fat
  • 3 eggs size M
  • 80 g whole spelt flour
  • 50 g liquid polyfloral honey
  • 1 teaspoon grated organic lemon zest
  • 120 g frozen berries
  • 1 pinch of table salt

Dough Preparation

    In a medium-sized bowl, mix the spelt flour, melted butter, honey, milk, eggs, lemon zest, and a pinch of salt. The final mixture should have a smooth consistency, similar to pancake batter. Place the bowl in the refrigerator for approximately 30-45 minutes.

Baking the Dessert

    Approximately 10 minutes before removing the dough from the refrigerator, preheat the oven to 180 °C. Prepare 6 small baking dishes (ramekins) with a volume of approximately 150 ml each.

    Remove the dough from the refrigerator. Distribute the berries evenly into the prepared dishes, then pour the batter over them. Place the dishes in the preheated oven and bake for 30-35 minutes at 170-180 °C, until the dessert turns golden and slightly puffed.
