ECO Valeriana has a high nutritional value and a pleasant taste, similar to that of a walnut.
Valeriana will ideally replace lettuce when it is not the season for lettuce. We use whole leaves for green or mixed salads.
We make an excellent sauce from oil, mustard, vinegar or lemon juice, add a little salt, pepper and sweeten it with sugar or honey. Valeriana can also be prepared with spinach and tastes delicious in pasta sauces and stir-fries.
