Purslane, also known as "grasita", is a plant that grows in the yard and which our grandmothers used to put in green vegetable soups, along with orach, sorrel, dock, and other similar ones that we may or may not know. The fleshy leaves of purslane are also used in summer salads, to which they give a unique, sour taste.
A purslane salad recipe: a few tablespoons of yogurt, a small clove of crushed garlic, with a little lemon juice, grated lemon zest, olive oil, a little salt and ground pepper, a medium cucumber cut into cubes, a bunch of purslane chopped not too finely - everything mixed well in a bowl and a refreshing and sour summer salad is ready!
