Usage:
Eggplants should be firm and "heavy", dense, with a smooth, shiny skin and a deep purple hue. When cutting an eggplant, use a stainless steel or wooden knife, not carbon steel, to prevent a phytochemical reaction that can cause the eggplant to turn black.
Tip:
Eggplants can have a slightly bitter taste.
