Colonia ECO Acacia Honey Cream 

Creamed honey is honey that has been processed to control crystallization. Also known as honey fondant, it has a smooth, spreadable, and fine consistency and a lighter color than liquid honey of the same floral type.

Creamed honey is lighter in color than liquid honey because the fructose and glucose that crystallize in honey reflect light differently, appearing whiter to the eye. Creamed honey is always lighter in color than liquid honey of the same floral type. This is the same reason that liquid honey that has crystallized is lighter in color than liquid honey that has not crystallized.

Creamed honey will not drip like liquid honey. Creamed honey also differs from liquid honey in that it will never crystallize into a hard block. This is because creamed honey is already crystallized, just in particles so small that instead of making a solid block they give a creamy texture.

Acacia honey, like many other specialized organic honey types, is derived purely from the nectar of acacia flowers. With a mildly sweet flavor, this honey variety is highly sought after worldwide.
