Tortelli are part of the filled pasta family, resulting from the union of egg pasta sheets and fillings of choice, with various shapes and contents. Filled pasta is a traditional dish throughout Italy. Tortelli, typical of the Emilia-Romagna region, can also be found under the name cappellaccio (the larger version of the cappeletto format, which differs from tortellini in the way it is closed). Tortelli, due to their size, can only be made by hand, and we make them by hand. First, we make a sheet of dough, then it is cut into squares, then the filling is added, then each square is folded into a triangle, then the ends of the triangle are joined around a finger. Easy, right?
