Beaujolais Nouveau, or Beaujolais Primeur, is a primeur wine produced in the Beaujolais vineyards, within the Beaujolais and Beaujolais-Villages appellations, mainly from the Gamay grape variety. The wine is made using carbonic maceration, an anaerobic fermentation of whole grapes that emphasizes fruit flavors without extracting bitter tannins from the grape skins.
Beaujolais is a light-bodied red wine with high acidity and low tannins. The wine has aromas of red fruits, including raspberries, red cherries, red currants, and cranberries.
