Oats are a cereal known and used since ancient times, being appreciated nowadays especially for its energy value. It contains many proteins, few carbohydrates and has a very low fat content. The flour is obtained by grinding and sifting the oats to remove foreign substances and impurities. The oats used as raw material are carefully selected and controlled according to well-defined criteria: humidity, specific weight, impurity content, temperature and smell, etc.
Oat flour can be used in bakery products together with wheat flour, for biscuits or other pastries. Oatmeal porridge is obtained from oat flakes, a preparation specific to Anglo-Saxon cuisine.
