Cut the sweet potatoes into larger pieces and cook in salted water for 15 minutes until softened. Drain the cooled sweet potatoes, salt and pepper, add the egg, chopped herbs (parsley, lovage) and mix everything well. Gradually add plain flour to the mixture.
Divide the dough into several parts and roll out a 1.5 cm diameter roll from each part on the floured rolling pin. Align the individual rolls and cut them to the size of gnocchi. Put in boiling salted water for about 3 minutes until they float. Add the drained gnocchi and drizzle a little oil into a hot pan and fry until golden brown.
Serve hot as a garnish for meat dishes with sauce.

Store at 13-16°C and 75-80% humidity. Do not store in the refrigerator, as this will create a hard center and an unpleasant taste.
