Eggplant salad: From classic to modern with tahini, yogurt or avocado

Tradition reinterpreted
Eggplant salad is the undisputed queen of the Romanian summer. But have you ever wondered what it would be like to enrich it with a dollop of creamy Greek yogurt, sesame paste (tahini), or even smooth avocado?
Romanian eggplant salad

The classic never dies, but it does reinvent itself. The smell of eggplants roasted on the grill or stovetop brings back childhood memories for all of us, when the kitchen would fill with that unmistakable, warm, and smoky aroma. Eggplant salad is a staple on our tables, but modern cuisine gives us the freedom to experiment. We can achieve a much lighter texture, a smooth creaminess, or even an exotic, Mediterranean, or Middle Eastern note. It all depends on the ingredients you choose to add to this wonderful combination.

The classic recipe: Simplicity that wins you over

Fresh eggplants and ingredients

For many of us, perfection means pure tradition. The classic recipe is based on simple ingredients, but of exceptional quality. Start with fresh Romanian eggplants, roasted until the flesh becomes soft and gets that smoky aroma. If you prefer the organic version, you can choose ECO Eggplants grown with care for nature.

After you have drained them well and chopped them finely, you have two traditional paths. The first is the light version, in which you gradually add Alnatura ECO Olive oil and a little extremely finely chopped Yellow onion for a slightly spicy and crunchy taste. The second version, loved for its rich creaminess, uses a generous tablespoon of Hamker Classic mayonnaise, which transforms the salad into a velvety delight.

Three modern reinterpretations you must try

If you want to step out of the box and surprise your taste buds, here are three brilliant ways to transform the classic eggplant salad:

The version with tahini

Add two tablespoons of Sesali Tahini to the chopped eggplants, along with a little garlic and lemon juice. You will get a dish with an intense roasted nut flavor, specific to the Middle East.

The version with yogurt

Replace the heavy mayonnaise with Kolios Greek yogurt 10%. The salad will become incredibly creamy, but much lighter, with a fresh acidity that highlights the taste of the eggplants.

The version with avocado

Mash a well-ripened Avocado ready to eat and mix it with the eggplants. The healthy fats in avocado offer a buttery texture and extra nutrients, without radically changing the taste you love.

Pro tips for perfect eggplants

  • Quick roasting: Roast the eggplants over high heat so that the flesh remains white and does not turn black. The skin must be completely charred.
  • Perfect draining: Leave the eggplants to drain in a wooden or plastic colander for at least an hour. Draining removes the bitter juice and ensures a dense texture.
  • Chopping without metal: Use a special wooden or plastic chopper to avoid oxidizing the eggplants, keeping their beautiful color and clean taste.
