Description
Ricotta (literally meaning "recooked") is made by coagulating the proteins that remain after the casein has been used to make cheese, it comes from the whey proteins, which is the liquid part that separates from the rennet during cheesemaking, during this process we add the different seasonings. The process of coagulating the whey proteins takes place by heating the whey to a temperature of 80-90 °C. The oldest method consists of heating the whey while waiting for the ricotta. We work following this method, taking it manually and putting the mold layer by layer. At this point we dry them in an oven for a night, and the product is ready.

About the company
It all started in 1925, from a small dairy in the old town of Siena. Since then, for the locals, the name Morbidi has become synonymous with "eating well". Over the years, the Morbidi family has always been able to innovate and rise to the challenges, and in the 1940s, we started working with pork, followed by sheep's milk, in accordance with the oldest local traditions. Over the generations, we have grown into a modern business, with a keen eye for sustainability and a short supply chain, but we have never forgotten where we started: in a wonderful place that remains ready to welcome anyone passing through the heart of Siena.
