ABOUT THE PRODUCT
This lot comes from an altitude of over 2,200 m, in the Sidama region of Ethiopia. It is obtained from the local variety 74158, naturally processed, with an anaerobic fermentation stage. This method helps the beans retain a high sweetness and develop a much more well-defined taste, specific to the terroir of the Bombe area. The profile is clean and easily recognizable.
The tasting begins with a subtle floral note of linden, immediately followed by a fresh taste of cherries. In the finish, the coffee has a fuller texture and leaves a lingering sweetness, very similar to that of quince jam. We recommend this coffee for espresso. The resulting shot is creamy and intense, and the cherry acidity balances directly with the sweet quince base. It is a consistent espresso that also performs excellently in combination with milk.
