King Oyster mushrooms, originally from Sicily are the largest species in the oyster mushroom genus, averaging 12-17 centimeters in length and having a thick, bulbous stem with a flat to wavy cap. The wide, smooth stem is spongy and dense, ranging in color from white to cream, and connects to short, prominent, brown gills with a grayish cap. The cap is also smooth and can have wavy edges or flat margins with many fissures depending on maturity.
