Shiitake Mushrooms
Shiitake mushrooms are small to medium in size, with caps that range from 3-5 cm in diameter, attached to slender stems. The caps range in color from light to dark brown and have a broad, umbrella-like shape with a characteristic wavy margin. Inside, the cream-colored flesh is firm and spongy. Underneath the cap, the white gills are closely spaced, not attached to the stem, and depending on maturity, there may also be a thin veil covering the gills. The stem, which ranges in color from cream to light brown, is smooth, tough, and fibrous.
Shiitake mushrooms have a rich, meaty, and buttery flavor when cooked. While you can eat shiitakes raw, their flavor is much more pronounced and developed when they are cooked.
