Preparation method

Clean the mushrooms and cut them into smaller pieces. Wash the pak choi and cut it in half lengthwise. Finely chop the garlic, ginger, and chili.

In a wok or a spacious pan, heat the sesame oil and sauté the garlic, ginger, and chili. Add the shiitake mushrooms and sauté them for about 3 minutes, then add the chopped pak choi.

Add the hoisin sauce and season with fish sauce. Pour in 5 tablespoons of water (or vegetable broth) and let the sauce reduce for 2-3 minutes over medium heat.

Chef's tip

For extra flavor, you can toast the sesame seeds in a dry pan before sprinkling them over the dish. If you prefer a more intense taste, add a little freshly grated ginger directly to the sauce.
