Preparation method
Preheat the oven to 180 °C and prepare a baking dish (approximately 25 cm × 30 cm).
Wash the chicken thighs and cut them in half through the joint. Peel the onion and garlic, then slice them thinly. Core the red bell pepper and cut it into thin strips.
Place the chicken pieces, onion, garlic, and bell pepper in the prepared dish. Add 2 tablespoons of oil, chicken broth, canned chopped tomatoes, black olives, sweet paprika, dried thyme, salt, and pepper. Mix all the contents of the dish well to combine the flavors.
Chef's tip
For an even more intense flavor, you can lightly brown the chicken thighs in a pan with a little oil before placing them in the dish.
If the sauce reduces too much during baking, you can add a little more water or chicken broth.
