Preparing the Base

Peel the potatoes and cut them into cubes of approximately 1 cm. Finely chop the yellow onion.

In a spacious pot, melt 60 g of butter over medium heat. Add the onion and sauté until translucent, stirring frequently. Add the potatoes, mix well, season with salt and pepper, then cover with a lid and simmer for 3 minutes.

Pour the chicken broth over the vegetables, bring to a boil, then reduce the heat and let it simmer for 20 minutes.
Chef's tip
Sauté the porcini mushrooms in a large pan; if the pan is too small, they will release water and boil instead of browning.
If the soup seems too thick, you can dilute it with a little warm water or broth until you reach the desired consistency.
