Preparation method
Preparing the ingredients and chicken broth
Peel the fresh garlic and ginger, then finely chop or grate them on a fine grater. Wash the boneless chicken thighs and cut them into thin strips or bite-sized pieces.
Cut the zucchini into thin strips (julienne), and slice the spring onions diagonally, keeping the white parts separate from the green tops reserved for garnish.
In a deep pot, place the chicken pieces, garlic, ginger, and the white parts of the spring onion. Pour in 1.2 liters of water and bring to a boil over medium-high heat.
Chef's tip
For an authentic Korean street food experience, serve alongside a small bowl of crunchy kimchi and Gochujang chili paste.
For extra flavor, you can lightly toast the sesame seeds in a dry pan for 1 minute before sprinkling them over the soup.
