Ingredient Preparation
Clean the shrimp if necessary. Remove the head and legs, then peel the shell, leaving the tail for a nicer appearance. Make a shallow cut along the back of the shrimp and remove the intestine. Wash them well and refrigerate until use.
Preheat the oven to 230°C. Peel and finely chop the shallot. Peel the garlic and slice it thinly. Cut the chili pepper lengthwise, remove the seeds, and cut it into fine strips.
Sauce Cooking and Baking
In a pan, sauté the shallot in olive oil until golden. Add the garlic and sauté for another minute. Add the chili pepper and peeled tomatoes. Stir in the honey, salt, and pepper, then simmer over low heat for 5 minutes.
Chef's tip
The shrimp are ready when they turn opaque and pink. Do not overcook them to avoid them becoming rubbery.
You can replace the white baguette with an herb baguette for extra savory flavor.
