Preparation method

Peel the onion and chop it finely. In a large pot, sauté the onion in clarified butter (ghee) until translucent.

Add the frozen spinach leaves and let them thaw in the pot, stirring occasionally.

Pour the chicken broth over the spinach, add the crushed garlic, salt, and cooking cream. Bring to a few boils.

Chef's tip

For an even more intense flavor, you can add a little freshly grated nutmeg at the end. Serve the soup with crispy croutons or roasted pumpkin seeds for added texture.
