Wash the sweet potatoes thoroughly in warm water and dry them. Pierce them in several places with a fork and place them on a baking tray lined with baking paper. Bake the potatoes at 200°C until soft – this takes approximately 45 minutes.
Meanwhile, cut the kale into small pieces and crumble the feta cheese with a fork. Place them in a large bowl and mix with 2 tablespoons of olive oil.
Remove the baked potatoes from the oven and cut them lengthwise so you can easily scoop out the flesh. Put the scooped-out flesh into the bowl with feta and kale, add salt and pepper, then mix everything well.
Chef's tip
For extra texture, you can add toasted pine nuts or crushed walnuts on top before the second baking.
