- 500 g mixed minced pork and beef
- 10 pcs lemongrass
- 2 cloves garlic
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 teaspoons brown sugar
- 1 bunch fresh coriander
- 1 handful shallot
Place the minced meat in a large bowl. Add the grated garlic, finely chopped coriander, brown sugar, fish sauce, and soy sauce. Mix everything very well by hand until the mixture becomes homogeneous. Divide the meat into 10 equal portions.
Prepare the lemongrass stalks: gently pierce the lower (thickest) part in a few places with a knife to release the aromas. With slightly moistened hands, shape each portion of meat around a lemongrass stalk, forming a kind of small skewer.
Cook the skewers on a grill or in a hot grill pan, turning them on all sides until the meat is well cooked through and nicely browned (approximately 10-15 minutes). Serve them warm, possibly with a spicy sauce or alongside rice noodles.
Chef's tip
If the lemongrass stalks are too thick, you can cut them lengthwise in half to get more skewers.
